As usual, the best is simple..!
It is difficult that complicated things work well, so we maintain things to the simpler level is possible, in order to make it work.
The Homemade Ravioli, Tagliatelle and other kind of pasta we prepare at Il Giardino, are made following the procedure we saw, in the more than ten years of operation , that is fine for the environment we are : high temperature and humidity.

So, we take just Flour, pure Water, Salt and Fresh Eggs and we mix them in the correct proportions, that vary from one kind of Pasta to the other, for to give it the right ” hardness”, once cooked for the appropriate time of each different plate or stuff we use for the Ravioli, each one of them with different percentage of humidity.
