Few Other recipes of the Italian Cusine need so much work…!!

The Parmesan Egg Plant is a great plate that can be served hot, just a litle warm or, specially during the hot summers of the South of Italy, where it is originated, cold, at ambient temperature, for a nutrient and refreshing lunch.

In the picture below you can see all the ingredients necessaries for the preparation of this plate.

The simplicity of the elements you see in the picture above, doesn’t reveal the hard work and the time necessary for to prepare a fine plate of Parmesana Egg Plant.

These pictures, the one above and the following one,  are part of a set that I shot for the Photographic Book of the Il Giardino Recipes, and the time between them is more than six hours…!!!

…six hours of cleaning and chopping, but, this is the bad part, removing continuously the sauce over the fire and turning the slices of Egg Plant on the boiling oil…..doing this in the tropic is not so far from an employment in hell….but the final result…that mix of flavours that are bringing you to a Sicily landscape,  one second after having the first piece of it in your mouth….well…it is worth the work…again….
