After several Years of research for the best cuts of Local Free Range Cattle, we can offer a selection of the Finest Meats, cut and prepared following the Antique Tradition of the Italian Cuisine, the same that made Famous in the Whole World the Fiorentina Cut, a piece of the back of the Cow, that has the two pieces of meat commonly known as Tenderloin and Short Loin.

In the USA, this cut had been called recently T-Bone, and today is known with this name on this side of the Atlantic, but, except for the variety of Cattle  that are utilized, is the same Piece of Meat, and we are preparing it with a lot of care for to give it the right degree of maturation and tenderness that a so special cut deserve.

Beautiful Juicy cuts of Tenderloin and Sirloin, or Lomo Churrasco of the Argentinian Tradition are part of the selection of Grilled meats we are preparing, and all them are served with grilled vegetables as Zucchini, Sweet Chile, Egg Plants and Squash, just touched with olive oil, Mediterranean herbs and Sea Salt, without any industrial sauce full of artificial flavours that only kill the taste of the Pure Meat cooked on the fire.

Whole Fish too are part of our Grill Selection of Plates, and we are the first ever, as usual, to offer a similar recipe in the Osa, being absolutely unknown in the local gastronomy the possibility of prepare a fish without the use of a big pan full of boiling low quality oil, often reused dozens of time, practice that produce some of the most powerful venoms for the Human body.

Once again we put in our Recipes, not only the search of a great taste and presentation, but the safety of cooking style that respect the Health of the Guest.
